Mary Susan's Coco-Pecan-Honey Summer Granola w/Peaches + Coconut Milk

*Serve with fresh peaches or mango + coconut milk
***Makes 7 cups
 
Dry Ingredients
-4 Tbsp ground flax seed
-1/2 cup chopped pecans
-1/2 cup pumpkin seeds
-1/4 cup slivered almonds
-1/3 cup zante currants
-Tsp cinnamon (or cardamom!)
-1 cup coconut shavings (1/2 cup mixed into granola and 1/2 cup sprinkled over)
-1/2 Tsp salt 
-4 cups organic rolled oats (wholegrain)
-2 sticks Ceylon cinnamon sticks
 
Liquid Ingredients
-1 Tsp organic vanilla extract
-6 Tbsp Honey (or agave or brown rice syrup)
-6 Tbsp coconut oil
 
Serve With
-freshly cut peaches and mango
-coconut milk, cream, or coconut milk yogurt
 
Optional Ingredients
-1 Tsp organic coconut sugar to sprinkle over top
-1 Tsp organic brown sugar to sprinkle over top
-chia seeds to sprinkle over top
 
 
 
Directions
1. Preheat oven to 325 degrees Fahrenheit fitted with a center rack. Oil a sheet pan or line baking sheet with parchment paper. 
2. Stir together oats, ground flaxseed, chopped pecans, pumpkin seeds, slivered almonds, zante currants, 1/2 cup coconut shavings in a bowl and mix. 
3. Heat coconut oil, honey, vanilla, cinnamon (or cardamom), and salt together in a small saucepan over low heat until heated through. Stir into oat/dry mixture. 
4. Spread evenly in a sheet pan and bake for 20-25 mins, stirring once, until golden. Sprinkle remaining 1/2 cup of coconut shavings over granola 3-5 minutes before it finished baking. 
5. Cool granola completely in pan (it will crisp as it cools). Option to sprinkle with brown sugar or coconut sugar if you choose too. 
6. Serve with fresh peaches or mangos and coconut milk.
